Chicken, Mango, and Avocado Salad 🥗🥑

Ingredients:

2 chicken breasts, cooked and shredded

1 ripe mango, diced

1 ripe avocado, diced

1/4 red onion, finely chopped

1 cup cherry tomatoes, halved

2 cups mixed lettuce

1/4 cup fresh cilantro, chopped

1/4 cup pecans, chopped (optional)


For the Dressing:

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon honey

Salt and pepper to taste


Instructions:

  1. In a large bowl, combine the shredded chicken, mango, avocado, red onion, and cherry tomatoes.
  2. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to prepare the dressing.
  3. Pour the dressing over the chicken and fruit mixture. Gently toss to coat, being careful not to mash the avocado.
  4. On a large serving plate or individual plates, arrange a bed of mixed lettuce.
  5. Spoon the chicken and fruit mixture over the lettuce.
  6. Sprinkle chopped cilantro on top.
  7. If using pecans, add them just before serving for extra crunch.
  8. Serve immediately to enjoy the fresh and vibrant flavors!
