Coconut Lime Fish Soup
Ingredients:
- 500 g fresh white fish (like cod or tilapia)
- 400 ml coconut milk
- Juice and zest of 2 limes
- 3 cloves of garlic, finely chopped
- 2 cm piece of ginger, grated

Directions:
- Cut the fish into bite-sized pieces and set aside.
- In a large pot, heat a bit of oil over medium heat. Add the chopped garlic and grated ginger, sautéing until fragrant.
- Pour in the coconut milk and bring to a gentle simmer.
- Add the lime juice and zest to the pot, stirring well to combine.
- Carefully add the fish pieces and cook for about 5-7 minutes, or until the fish is cooked through and flakes easily.
