Ingredientes:
- 1 kg de camarones
- 1/2 taza de apio, finamente cortado en cubitos (1 tallo grande)
- 1/2 taza de cebollín en rodajas finas
- 1 papa cocida, cortada en cubos
- 1 zanahoria cocida, cortada en cubos
- 1 taza de elotes cocidos
- 1/2 taza (100 gramos) de mayonesa (puedes usar mayonesa casera si lo prefieres)
- 2 cucharadas de jugo de limón fresco
- 1/4 de cucharadita de sal marina fina
- 4 giros de molinillo de pimienta negra
- Opcional: una pizca de eneldo fresco o seco

Preparación:
Cocinar los camarones:
- Agrega 2 litros de agua a una olla grande y colócala en la estufa a fuego alto.
- Exprime un poco de jugo de limón en el agua y agrega las mitades de limón restantes a la olla.
- Añade un diente de ajo, 1 hoja de laurel, un poco de pimienta, sal y condimento cajún al gusto.
- Lleva el agua a ebullición. Una vez que hierva, retira la olla del fuego y sumerge inmediatamente los camarones en el agua caliente.
- Déjalos cocinar durante 3 minutos.
- Con unas pinzas o una cuchara ranurada, retira los camarones cocidos y colócalos en un plato. Deja que se enfríen por completo en el refrigerador.
Preparar la ensalada:
- Una vez que los camarones estén fríos, colócalos en un tazón grande junto con las verduras picadas (apio, cebollín, papa, zanahoria y elotes).
- Agrega la mayonesa, el jugo de limón, la sal, la pimienta y, si lo deseas, un poco de eneldo.
- Mezcla todos los ingredientes hasta que estén bien combinados.
- Deja reposar la ensalada en el refrigerador durante al menos 1 hora para que los sabores se mezclen y se intensifiquen.
Servir:
Sirve fría como plato principal o acompañamiento. Puedes decorar con hojas frescas de perejil o eneldo si lo prefieres.
