- 100 g cream cheese or mozzarella cheese
- 100 g beef bacon, chopped
- 1 red pepper, cut into strips
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried rosemary
- 1 teaspoon of dry thyme
- Salt and pepper to taste
- Kitchen thread to tie the loin
For the glaze (optional):
- 2 tablespoons of honey
- 2 tablespoons of Dijon mustard
- 1 tablespoon of lemon juice

Instructions:
Prepare the stuffing:
- In a frying pan, heat a tablespoon of olive oil.
- Sauté the beef bacon until golden and crispy. Add minced garlic and fresh spinach, cooking for 2-3 minutes until the spinach softens.
- Remove from heat and let it cool. Mix with cream cheese or mozzarella.
Stuff the Beef Loin:
- Preheat the oven to 200°C (400°F).
- Open the beef loin like a book, making a longitudinal cut without cutting through completely.
- Season the inside with salt, pepper, rosemary, and thyme.
- Spread the spinach, cheese, and beef bacon mixture over the beef loin, then add red pepper strips.
- Roll the beef loin carefully and tie it with cooking thread to maintain its shape.
Sear the loin:
- Heat the remaining tablespoon of olive oil in a large skillet over high heat.
- Sear the beef loin on all sides until golden brown.
Bake the loin:
- Place the beef loin in a baking tray.
- Prepare the glaze by mixing honey, Dijon mustard, and lemon juice. Brush the beef loin with the glaze before baking.
- Bake for 45-50 minutes, basting it with its juices every 15 minutes.
- Remove from the oven when the internal temperature reaches 63-65°C (145°F) for medium rare or adjust according to your preference.
Rest and serve:
- Let the beef loin rest for 10 minutes before slicing.
- Serve with mashed potatoes, fresh salad, or roasted vegetables.
