Chicken and Mushroom Pasta in Cream Sauce

Ingredients

  • 250 g (9 oz) pasta (penne, fusilli, or your favorite)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 chicken breasts (cut into medium-sized pieces)
  • 200 g (7 oz) fresh mushrooms (sliced)
  • 2 garlic cloves (finely chopped)
  • 1 cup cooking cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)

Method

  1. Cook the pasta: Boil the pasta in salted water according to package instructions. Drain and set aside.
  2. Sear the chicken: Heat olive oil and butter in a large skillet over medium heat. Add the chicken pieces, season with salt and pepper, and cook until golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the mushrooms: In the same skillet, add the mushrooms and garlic. Sauté for about 5 minutes until the mushrooms are tender and lightly browned.
  4. Make the sauce: Pour the cream and chicken broth into the skillet with the mushrooms. Stir well and simmer on low heat until the sauce thickens slightly. Add the Parmesan cheese and stir until fully melted.
  5. Combine everything: Return the cooked chicken to the skillet along with the drained pasta. Toss everything together to coat evenly in the creamy sauce.
  6. Serve: Garnish with freshly chopped parsley and an extra sprinkle of Parmesan cheese, if desired. Serve warm and enjoy!
