A moist, flavorful bread bursting with tropical vibes and topped with a sprinkle of toasted coconut for extra indulgence.

Ingredients:

  • 2 ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut, plus extra for garnish
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions:

1️⃣ Prep: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2️⃣ Mix Wet Ingredients: In a large bowl, whisk mashed bananas, crushed pineapple, shredded coconut, eggs, oil, sugar, and vanilla until well combined.
3️⃣ Combine Dry Ingredients: In a separate bowl, sift together flour, baking powder, baking soda, and salt. Gradually fold the dry mixture into the wet ingredients until just combined. Avoid overmixing!
4️⃣ Add Texture: If using, gently fold in chopped nuts for extra crunch.
5️⃣ Bake: Pour the batter into the prepared loaf pan. Sprinkle a bit of shredded coconut on top. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
6️⃣ Cool and Serve: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack. Slice and enjoy your slice of paradise!

Tips:

  • For extra tropical flair, try adding a splash of rum or coconut extract.
  • Serve with a drizzle of honey or cream cheese frosting for a sweeter touch.
