Pastel de Avena, Manzana y Zanahoria 🍎🥕✨

Ingredientes:

  • 1 pizca de sal
  • 3 huevos
  • 2 zanahorias medianas, ralladas
  • 1 taza de avena
  • 1 taza de harina de trigo integral
  • 1/2 taza de azúcar o endulzante natural (miel, stevia, etc.)
  • 1 manzana mediana, rallada
  • 1/2 taza de leche (puede ser vegetal)
  • 1/3 taza de aceite de coco o mantequilla derretida
  • 1 cucharadita de canela en polvo
  • 1 cucharadita de polvo de hornear
  • 1/2 cucharadita de bicarbonato de sodio
  • 1/2 cucharadita de esencia de vainilla
  • Nueces o almendras picadas (opcional)
  • Pasas o arándanos deshidratados (opcional)

Preparación:

1️⃣ Precalentar el horno a 180°C (350°F) y engrasar un molde para pastel.

2️⃣ En un bol grande, batir los huevos con el azúcar o endulzante hasta obtener una mezcla espumosa.

3️⃣ Agregar la leche, el aceite de coco y la vainilla, mezclando bien.

4️⃣ Incorporar la avena, la harina, la canela, la sal, el polvo de hornear y el bicarbonato, mezclando hasta obtener una masa homogénea.

5️⃣ Añadir la manzana y la zanahoria ralladas, mezclando con movimientos envolventes.

6️⃣ Opcional: Agregar frutos secos o pasas para un toque extra de sabor y textura.

7️⃣ Verter la mezcla en el molde y hornear por aproximadamente 35-40 minutos, o hasta que al insertar un palillo en el centro, salga limpio.

8️⃣ Dejar enfriar antes de desmoldar y servir.
