Ingredients:

- 4 cups (500g) all-purpose flour
- 200g cold butter, cubed
- 2 eggs
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ¼ cup (60ml) cold water
For the Filling:
- ¾ pound (350g) ground beef
- 1 potato, peeled and diced into small cubes
- 1 large onion, chopped
- 1 large carrot, peeled and diced
- 1 cup (240ml) water or beef broth
- Salt & pepper to taste
- 1 teaspoon thyme
- 2 tablespoons flour
- 2 tablespoons oil
- 1 egg (for brushing)

Instructions:
Prepare the Pastry:
- In a large bowl, mix flour, sugar, salt, and baking powder.
- Add cubed butter and rub it into the flour until it forms a crumbly texture.
- Beat 2 eggs with cold water, then add to the flour mixture. Mix until a dough forms.
- Cover the dough and let it rest for 30 minutes.
Make the Filling:
- In a large pan, heat oil over medium heat. Add onion and sauté for 5-6 minutes until soft.
- Stir in diced carrots and potatoes, cooking for another 3-4 minutes.
- Add ground beef, breaking it apart with a spoon, and cook for 4-5 minutes until browned.
- Season with salt, pepper, thyme, and stir in flour for thickness. Add water or beef broth and cook for 2-3 minutes until slightly thickened. Remove from heat and let cool.
Assemble the Meat Pies:
- Divide the dough into 4 pieces and roll each out to ⅛-inch thickness. Cut into desired round shapes.
- Place 1-2 tablespoons of the meat filling in the center of each round. Fold the dough over and seal by pressing with your fingers or a fork.
- Poke the top with a fork to create steam vents.
Bake:
- Brush the pies with a beaten egg for a golden crust.
- Bake at 375°F (190°C) for 25-30 minutes or until golden brown.
- Let cool slightly before serving.
