Pan de Avena y Chía (Sin Harina)

Ingredients
- 2 cups rolled oats (use gluten-free oats if needed)
- 3 tablespoons chia seeds
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 eggs
- 1 cup water or plant-based milk
- 2 tablespoons olive oil or coconut oil
- Optional toppings: sunflower seeds, pumpkin seeds, or chopped nuts
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (180°C) so it’s ready when you’ve finished preparing the batter.
2. Mix Dry Ingredients
In a large bowl, combine the oats, chia seeds, baking powder, and salt. Stir to evenly distribute the ingredients.

3. Prepare the Chia Gel
In a small bowl, mix the chia seeds with water or plant-based milk and let them sit for 5-10 minutes until they form a gel-like consistency. This helps bind the ingredients together.
4. Mix Wet Ingredients
In another bowl, beat the eggs and whisk in the olive oil or melted coconut oil. Add this mixture to the dry ingredients along with the chia gel.
5. Combine Ingredients
Mix everything thoroughly until you get a smooth, homogeneous batter. If the batter feels too dry, add a little more water or plant-based milk, one tablespoon at a time.
6. Prepare the Baking Pan
Grease a loaf pan or line it with parchment paper. Pour the batter into the pan and spread it evenly. If desired, sprinkle sunflower seeds, pumpkin seeds, or chopped nuts on top for extra texture and flavor.
7. Bake the Bread
Place the pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
8. Cool and Serve
Remove the bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing and serving.
