Preparación:
- Precalienta el horno:

- Escúrrelos y resérvalos.
- Prepara las verduras salteadas:
- Calienta los 40 ml de aceite vegetal en una sartén.
- Saltea la cebolla, los tomates y los pimientos hasta que estén suaves y fragantes (unos 5-7 minutos).
- Añade una pizca de sal y mezcla bien.
- Prepara la masa:
- En un bol, bate los huevos junto con la harina y la leche hasta obtener una mezcla homogénea.
- Agrega el aceite de girasol y la cucharadita de sal, y bate bien hasta formar una masa espesa.
- Arma el gratinado:
- En un molde para hornear previamente engrasado, coloca el brócoli, la coliflor y la mezcla de verduras salteadas en capas.
- Vierte la masa uniformemente sobre las verduras.
- Añade el queso y el perejil:
- Espolvorea el queso rallado de manera uniforme sobre el molde.
- Decora con perejil fresco picado para un toque extra de sabor.
- Hornea:
- Lleva el molde al horno y hornea durante 25-30 minutos, o hasta que la parte superior esté dorada y la masa bien cocida.
- Sirve:
Deja reposar unos minutos antes de servir. Este platillo es ideal para acompañar con pan tostado o una ensalada fresca.
