Ingredients
- 4 cups of plain yogurt (unsweetened or lightly sweetened; Greek yogurt works well too)
- 4 large eggs (room temperature for better mixing)
- 4 tablespoons of cornstarch (helps give the cake structure and keeps it light)
- 4 tablespoons of sugar (adjust based on your preferred sweetness level; you can also use honey or a sugar substitute)

Method
Prepare the batter: Begin by gathering your ingredients and preheating your oven to 180°C (350°F). In a large mixing bowl, combine the yogurt, eggs, sugar, and cornstarch. Using a whisk or a hand mixer, blend all the ingredients together until the mixture is smooth and creamy. Make sure there are no lumps of cornstarch in the batter, as this ensures an even texture throughout the cake. The batter should have a thick but pourable consistency.
Pour into a pan: Prepare your baking pan by either greasing it with butter or oil or lining it with parchment paper. This prevents the cake from sticking and makes it easier to remove after baking. Use a round or square pan for even baking. Pour the batter into the prepared pan, spreading it evenly with a spatula if necessary.
Bake: Place the pan in the preheated oven and bake for approximately 35–40 minutes. During the baking process, the cake will rise slightly and turn a beautiful golden color on the top. To check if the cake is done, insert a toothpick or skewer into the center. If it comes out clean or with a few crumbs, the cake is ready. If there’s wet batter on the toothpick, continue baking for an additional 5 minutes and test again. Avoid overbaking to maintain the cake’s soft and moist texture.
Cool and serve: Once baked, remove the cake from the oven and let it cool completely in the pan. This step is crucial, as the cake needs time to firm up as it cools. After cooling, carefully loosen the edges with a knife and transfer the cake to a serving plate. For a decorative touch, dust the top with powdered sugar, drizzle with honey, or serve with a side of fresh fruit like berries or sliced peaches.
This yogurt cake is a versatile treat that pairs well with a variety of toppings. Serve it plain for a light snack, or dress it up with whipped cream and chocolate shavings for a more indulgent dessert. The natural tanginess of the yogurt adds a refreshing flavor, while the absence of flour keeps the cake light and delicate. Perfect for those following gluten-free diets or anyone who loves simple, homemade desserts.
Enjoy this easy-to-make yogurt cake with your family and friends. It’s sure to become a go-to recipe in your kitchen, whether for breakfast, dessert, or an afternoon pick-me-up!
