Ingredients

  • 2 cups of shredded cabbage
  • 1 cup of grated carrots
  • 3 large eggs
  • ½ cup of grated cheese (cheddar or mozzarella)
  • 2 tablespoons of chopped fresh parsley (optional)
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 tablespoon of olive oil (for greasing)

Method

Prepare the veggies: Start by shredding the cabbage and grating the carrots. Place them in a mixing bowl and sprinkle with salt. Mix well and let it sit for 5 minutes, then gently squeeze out any excess moisture using your hands or a kitchen towel.

Mix the batter: In the same bowl, add the eggs, black pepper, grated cheese, and parsley (if using). Stir until everything is well combined.

Prepare the pan: Lightly grease a baking dish with olive oil. Spread the mixture evenly into the dish, ensuring it’s packed tightly for even baking.

Bake: Preheat your oven to 180°C (350°F). Place the dish in the oven and bake for 25–30 minutes, or until the top is golden and set. A toothpick inserted in the center should come out clean.

Cool and serve: Remove from the oven and let the casserole cool for 5–10 minutes. Slice into squares or wedges and serve warm.

This cabbage and egg breakfast casserole is delicious on its own or paired with a slice of crusty bread. It’s a nutrient-packed way to fuel your day, and the cheesy topping adds just the right amount of indulgence.
