Ingredientes
Para el rollo de carne:
- 1 kg de carne molida (de res, cerdo o mezcla)
- 2 huevos
- 1 cebolla (rallada)
- 2 dientes de ajo (picados)
- 1 cdita de sal
- 1 cdita de pimienta negra
- 1 cdita de pimentón
- Perejil fresco picado (al gusto)
- 250 g de espinacas (frescas o congeladas, bien escurridas)
- 200 g de champiñones frescos (picados)
- 200 g de queso mozzarella o parmesano (rallado)
- 4 cdas de salsa de soja
- 2 cdas de salsa de tomate
- 1 cdita de mostaza
- 1 cda de miel
Para la ensalada (opcional):
- 1 pepino
- 1 tomate
- 50 g de nueces
- 2 dientes de ajo (picados)
- 1 cda de miel
- Un chorrito de aceite de oliva

Preparación
1. Preparar la mezcla de carne
En un bowl grande, mezcla la carne molida, los huevos, la cebolla rallada, el ajo picado, la sal, la pimienta negra, el pimentón y el perejil. Amasa bien hasta que todos los ingredientes estén integrados.
2. Extender y rellenar
Sobre una lámina de papel film, extiende la mezcla de carne formando un rectángulo de 1–1,5 cm de grosor. Cubre con una capa de espinacas bien escurridas, los champiñones picados y el queso rallado.
3. Enrollar
Con ayuda del papel film, enrolla la carne desde un extremo formando un cilindro firme. Retira el papel film y asegura el rollo con hilo de cocina para que mantenga su forma.
4. Preparar la salsa y hornear
Mezcla la salsa de soja, la salsa de tomate, la mostaza y la miel en un tazón pequeño. Unta el rollo de carne con esta mezcla. Colócalo en una fuente para horno y hornea a 180°C (350°F) durante 45–60 minutos. Durante la cocción, báñalo ocasionalmente con los jugos que suelte en la fuente.
5. Reposo y corte
Deja reposar el rollo de carne unos 5–10 minutos al sacarlo del horno. Esto ayudará a mantener su forma al cortarlo. Sirve en rodajas gruesas.
Ensalada opcional
- Corta en dados el pepino y el tomate.
- Mezcla con las nueces, el ajo picado, la miel y un chorrito de aceite de oliva. Remueve con cuidado y sirve como guarnición fresca.
