Ingredientes
- 1 pollo entero
- 1 kg de carne molida de res
- 2 papas
- 2 zanahorias
- 2 manzanas
- 100 gramos de nueces
- 100 gramos de almendras
- 100 gramos de ciruela pasa
- 2 barras de mantequilla
- 2 cucharadas de mostaza
- 2 cucharadas de mayonesa
- Jugo de piña
- 1 lata de piña en almíbar
- Un poquito de vino tinto

Preparación
- Marinado del pollo:
- Disolver una barra de mantequilla y poner en un recipiente.
- Agregar mayonesa, mostaza y sal al gusto, y batir con una cuchara.
- Untar la preparación en todo el pollo, incluyendo tres ajos molidos.
- Utilizar una jeringa para inyectar el pollo con la mezcla. Si la mezcla está espesa, agregar un poco de jugo de piña.
- Dejar reposar toda la noche.
- Relleno:
- Calentar media barra de mantequilla en un sartén.
- Agregar tres dientes de ajo finamente picados y un cuarto de cebolla picada.
- Añadir la carne molida y cocinar.
- Agregar papa y zanahoria previamente cocidas y en cuadritos.
- Añadir manzana, nuez, almendra y ciruela pasa, y dejar cocinar por 10 minutos.
- Recaudo:
- Moler 10 chiles guajillos y un chile pasilla junto con media cucharada de comino, 5 clavos, 5 pimientas, una ramita de tomillo, 3 hojas de laurel, 3 dientes de ajo y un cuarto de cebolla.
- Agregar la mezcla a todo el pollo.
- Horneado:
- Precalentar el horno a 200 grados.
- Untar mantequilla en todo el molde para evitar que se queme.
- Hornear el pollo durante 2 horas.
