Ingredientes:
- 1 kilo de camarón: Puedes usar camarón fresco o congelado, asegurándote de limpiarlos y desvenarlos correctamente.
- 1 papa: Pelada y cortada en cubos pequeños.
- 1 zanahoria: Pelada y cortada en rodajas o cubos pequeños.
- 1 manojo de epazote: Esta es una hierba típica de la cocina mexicana que aporta un sabor distintivo.
- 1 chayote: Pelado y cortado en cubos.
- 1 tomate rojo: Este se utilizará para dar sabor y color al caldo.
- 2 chiles guajillo: Son chiles secos que se deben rehidratar y licuar para añadir al caldo.
- 1 trocito de cebolla: Ayuda a darle más sabor al caldo.
- 1 ajo: Un diente de ajo para aportar aroma y sabor.
- 1 rama de cilantro: Para añadir frescura al caldo.

Pasos:
- Preparación de los camarones:
- Pela los camarones y guarda las cáscaras. Retira la vena de los camarones con la ayuda de un palillo.
- Caldo base:
- Pon a cocer las cáscaras de camarón junto con el tomate y los chiles guajillo en medio litro de agua. Esto formará la base del caldo con mucho sabor.
- Preparación de las verduras:
- Pela y pica la papa, zanahoria, chayote, y calabacita (si decides incluirla).
- Cocción inicial de las verduras:
- Calienta un poco de aceite en una olla grande. Fríe la papa, zanahoria y chayote por unos 5 minutos.
- Luego agrega la calabacita y sigue friendo por unos minutos más.
- Licuar y colar:
- Licúa la mezcla de las cáscaras de camarón, tomate, chiles guajillo, cebolla y ajo. Licúa muy bien y luego cuela esta mezcla para agregarla a las verduras en la olla.
- Cocción del caldo:
- Añade sal y pimienta al gusto. Agrega la rama de cilantro y deja que la mezcla hierva hasta que las verduras estén bien cocidas.
- Añade el epazote troceado y los camarones. Cocina todo junto por unos 5 a 8 minutos más.
- Finalización y servicio:
- Retira las ramas de cilantro del caldo. Sirve de inmediato para disfrutarlo caliente.
