🍖 Stuffed Beef Loin: A Perfect Combination of Flavors ✨

Ingredients:

  • 1 beef loin (approximately 1.5 kg)
  • 100 g of fresh spinach
  • 100 g cream cheese or mozzarella cheese
  • 100 g beef bacon, chopped
  • 1 red pepper, cut into strips
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of dry thyme
  • Salt and pepper to taste
  • Kitchen thread to tie the loin

For the glaze (optional):

  • 2 tablespoons of honey
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of lemon juice

Instructions:

Prepare the stuffing:

  1. In a frying pan, heat a tablespoon of olive oil.
  2. Sauté the beef bacon until golden and crispy. Add minced garlic and fresh spinach, cooking for 2-3 minutes until the spinach softens.
  3. Remove from heat and let it cool. Mix with cream cheese or mozzarella.

Stuff the Beef Loin:

  1. Preheat the oven to 200°C (400°F).
  2. Open the beef loin like a book, making a longitudinal cut without cutting through completely.
  3. Season the inside with salt, pepper, rosemary, and thyme.
  4. Spread the spinach, cheese, and beef bacon mixture over the beef loin, then add red pepper strips.
  5. Roll the beef loin carefully and tie it with cooking thread to maintain its shape.

Sear the loin:

  1. Heat the remaining tablespoon of olive oil in a large skillet over high heat.
  2. Sear the beef loin on all sides until golden brown.

Bake the loin:

  1. Place the beef loin in a baking tray.
  2. Prepare the glaze by mixing honey, Dijon mustard, and lemon juice. Brush the beef loin with the glaze before baking.
  3. Bake for 45-50 minutes, basting it with its juices every 15 minutes.
  4. Remove from the oven when the internal temperature reaches 63-65°C (145°F) for medium rare or adjust according to your preference.

Rest and serve:

  1. Let the beef loin rest for 10 minutes before slicing.
  2. Serve with mashed potatoes, fresh salad, or roasted vegetables.
