Ingredientes:
Para la sopa:
- 1 cebolla, picada
- 1 zanahoria, picada
- 3 tallos de apio, picados
- 1 cucharada de pasta de tomate
- 226 gramos de tomates enlatados
- 454 gramos de lentejas
- Un pequeño trozo de queso parmesano
- Agua
- Pimienta negra
- Sal
- Orégano
- 1 calabacín, picado
- 1 diente de ajo, picado
- Eneldo fresco y perejil, picados
- Espinacas baby, un puñado
Para el pan:
- 3 rebanadas de pan
- Aceite de oliva
- Sal

Preparación:
- Sopa:
- En una olla grande, sofríe la cebolla, la zanahoria y el apio en un poco de aceite de oliva hasta que estén tiernos.
- Agrega la pasta de tomate y los tomates enlatados. Cocina por unos minutos.
- Añade las lentejas, el queso parmesano y suficiente agua para cubrir los ingredientes.
- Lleva a ebullición, luego reduce el fuego y deja hervir a fuego lento durante 1 hora, o hasta que las lentejas estén tiernas.
- Condimenta con pimienta negra, sal y orégano al gusto.
- Añade el calabacín, el ajo, el eneldo, el perejil y las espinacas baby. Cocina por unos minutos más hasta que las verduras estén tiernas.
- Pan:
- Precalienta el horno a 180°C.
- Coloca las rebanadas de pan en una bandeja para hornear.
- Rocía con aceite de oliva y espolvorea con sal.
- Hornea hasta que estén doradas y crujientes.
