Ingredientes:
- 1 taza de hojuelas de avena
- 1/2 taza de harina de trigo integral
- 1 cucharadita de polvo para hornear
- 1/2 cucharadita de bicarbonato de sodio
- 1/2 cucharadita de canela molida
- 1/4 cucharadita de nuez moscada molida
- 1/4 cucharadita de sal
- 2 huevos grandes
- 1/2 taza de aceite vegetal
- 1 cucharadita de extracto de vainilla
- 1 manzana rallada
- 1 zanahoria rallada

Preparación:
- Precalienta el horno a 180°C (350°F). Engrasa y enharina un molde para pastel de 20 cm (8 pulgadas).
- En un tazón grande, mezcla la avena, la harina, el polvo para hornear, el bicarbonato de sodio, la canela, la nuez moscada y la sal.
- En otro tazón, bate los huevos, el aceite y la vainilla hasta que estén bien combinados.
- Incorpora los ingredientes húmedos a los secos y mezcla hasta que estén apenas combinados. No mezcles demasiado.
- Agrega la manzana y la zanahoria ralladas a la masa y mezcla suavemente.
- Vierte la masa en el molde preparado y hornea durante 40-45 minutos, o hasta que un palillo insertado en el centro salga limpio.
- Deja enfriar el pastel en el molde durante 10 minutos antes de pasarlo a una rejilla para enfriar completamente.
