Ingredientes:
- 2 manzanas medianas (de tu preferencia)
- 2 zanahorias medianas
- 150 g de copos de avena (puedes usar avena molida para una textura más fina)
- 3 huevos
- 100 ml de aceite de oliva o de coco
- 100 ml de leche (puede ser leche vegetal como de almendra o avena)
- 1 cucharadita de canela en polvo
- 1 cucharadita de polvo de hornear
- 1 cucharadita de esencia de vainilla
- 1 pizca de sal
- 50 g de pasas o nueces (opcional)
- 1 cucharadita de miel o sirope de agave (opcional)

Preparación:
1️⃣ Preparar las frutas y verduras:
Pela y ralla las zanahorias. Pela las manzanas, retira el corazón y córtalas en trozos pequeños o rállalas.
2️⃣ Mezclar ingredientes secos:
En un bol grande, combina la avena, la canela, el polvo de hornear y la pizca de sal.
3️⃣ Mezclar ingredientes líquidos:
En otro bol, bate los huevos y añade el aceite, la leche y la esencia de vainilla. Agrega la miel o el sirope si deseas un toque más dulce.
4️⃣ Incorporar las frutas y verduras:
Añade las manzanas y las zanahorias ralladas a la mezcla líquida.
5️⃣ Unir todos los ingredientes:
Añade poco a poco los ingredientes secos a la mezcla líquida, removiendo hasta obtener una masa homogénea. Si deseas, incorpora las pasas o nueces en este punto.
6️⃣ Precalentar el horno:
Precalienta el horno a 180°C (350°F).
7️⃣ Preparar el molde:
Engrasa ligeramente un molde para bizcochos o cúbrelo con papel vegetal.
8️⃣ Hornear:
Vierte la mezcla en el molde y hornea durante 35-40 minutos, o hasta que al insertar un palillo en el centro del bizcocho, éste salga limpio.
9️⃣ Enfriar y servir:
Deja que el bizcocho se enfríe en el molde antes de desmoldarlo.
