1. Precalentar el horno:
Ajusta la temperatura del horno a 180°C (350°F). Engrasa y enharina un molde para pastel o cúbrelo con papel pergamino para evitar que se pegue.
2. Preparar la masa:
- En un bol grande, bate los huevos junto con el azúcar hasta que la mezcla esté espumosa y ligeramente pálida.
- Añade el aceite, el yogur natural y el contenido del paquete de gelatina de limón. Mezcla bien hasta integrar todos los ingredientes.
- Incorpora poco a poco la harina de trigo tamizada junto con el polvo de hornear, revolviendo suavemente para evitar grumos. Continúa mezclando hasta obtener una masa homogénea y ligera.
3. Hornear:
Vierte la mezcla en el molde preparado y alisa la superficie con una espátula. Hornea durante 35-40 minutos, o hasta que al insertar un palillo en el centro, este salga limpio.
4. Preparar la cobertura:
Mientras el pastel se hornea, vierte la leche condensada en un recipiente. Si deseas un glaseado más ácido, agrega 1-2 cucharadas de jugo de limón fresco y mezcla bien. Reserva.
5. Enfriar y decorar:
Retira el pastel del horno y deja enfriar en el molde durante 10 minutos antes de desmoldarlo. Transfiere a una rejilla para que se enfríe completamente.
