- Perejil fresco picado

Instrucciones Paso a Paso:
- Prepara los vegetales:
Lava y corta todos los vegetales según la lista de ingredientes. - Saltea la base:
En una olla grande, calienta 2 cucharadas de aceite de oliva. Sofríe la cebolla hasta que esté transparente. Añade el ajo, el apio y la zanahoria, y cocina por 3-5 minutos. - Añade los sabores principales:
Agrega los tomates picados y cocina hasta que se suavicen. Luego, añade la papa, la calabacita y el brócoli. Mezcla bien. - Incorpora el caldo:
Vierte el litro de caldo de verduras en la olla. Añade sal, pimienta y la cúrcuma (si estás usándola). Lleva a ebullición y luego reduce el fuego. Cocina a fuego lento durante 20-25 minutos, o hasta que las verduras estén tiernas. - Finaliza con espinacas:
Cuando las verduras estén listas, añade las espinacas frescas. Cocina por 2 minutos más. - Sirve y decora:
Sirve la sopa caliente en un tazón. Decora con perejil fresco y acompaña con una rodaja de limón para un toque fresco.
