Ingredientes:
- 1 cebolla, finamente picada
- 2 cucharadas de aceite de oliva
- 2 zanahorias, peladas y en cubos
- 2 calabacines, en cubos
- 2 patatas, peladas y en cubos
- 1 pimiento, picado
- 1 taza de guisantes
- 4 tazas de caldo de verduras
- 1 lata de tomates en cubos (opcional)
- Sal y pimienta negra al gusto
- Hierbas frescas (perejil, tomillo o eneldo), picadas
- 2-3 dientes de ajo, picados (opcional)

Instrucciones:
- Preparar los Ingredientes:
- Pica finamente la cebolla.
- Pela y corta en cubos las zanahorias y las patatas.
- Corta los calabacines en cubos.
- Pica el pimiento.
- Si utilizas ajo, pica los dientes de ajo.
- Saltear las Verduras:
- En una olla grande, calienta el aceite de oliva a fuego medio.
- Añade la cebolla finamente picada y saltea hasta que esté translúcida.
- Añade el ajo picado (si lo usas) y saltea durante un minuto más.
- Añadir las Verduras:
- Añade las zanahorias, los calabacines, las patatas y el pimiento a la olla.
- Saltea durante unos 5-7 minutos, removiendo ocasionalmente.
- Añadir el Caldo y Cocer a Fuego Lento:
- Vierte el caldo de verduras y lleva a ebullición.
- Una vez que hierva, reduce el fuego y deja cocinar a fuego lento durante unos 20 minutos o hasta que las verduras estén tiernas.
- Añadir los Guisantes y Condimentos:
- Añade los guisantes y cocina durante 5 minutos más.
- Sazona con sal y pimienta negra al gusto.
- Opcionales:
- Si deseas un sabor más rico, puedes añadir una lata de tomates en cubos junto con el caldo.
- Para una textura más cremosa, puedes licuar una porción de la sopa y mezclarla de nuevo en la olla.
- Adornar y Servir:
- Espolvorea hierbas frescas como perejil, tomillo o eneldo sobre la sopa.
- Sirve la sopa caliente y disfruta de los sabores saludables.
