Chiles en Vinagre 😋

Ingredientes:

  • 10 chiles jalapeños (pueden ser serranos o de tu preferencia)
  • 1 zanahoria grande, cortada en rodajas
  • 1 cebolla mediana, cortada en rodajas
  • 3 dientes de ajo, pelados
  • 1 taza de vinagre blanco
  • 1 taza de agua
  • 2 hojas de laurel
  • 1 cucharada de orégano seco
  • 1 cucharadita de pimienta negra en grano
  • 1 cucharadita de sal
  • 1 cucharadita de azúcar
  • 1 cucharada de aceite vegetal
  • Opcional: ramitas de tomillo, laurel adicional, o especias al gusto (clavos, canela en rama)

Preparación:

  1. Lavar los Chiles:
    • Lava bien los chiles. Si prefieres que el picante no sea tan intenso, puedes hacerles un pequeño corte en la punta para que se infusione mejor el vinagre.
  2. Sofreír Ajo y Verduras:
    • En una olla grande, calienta el aceite vegetal a fuego medio.
    • Añade los dientes de ajo y deja que se doren ligeramente. Luego, agrega la cebolla y la zanahoria, y sofríe por unos minutos hasta que la cebolla esté ligeramente transparente.
  3. Añadir los Chiles:

  4. Agregar Líquidos y Especias:

  6. Envasar en Frascos:
    • Retira del fuego y deja que se enfríe un poco. Luego, transfiere los chiles y las verduras a frascos de vidrio previamente esterilizados.
    • Vierte el líquido de cocción hasta cubrir completamente los chiles. Asegúrate de que no queden burbujas de aire en los frascos.
  7. Sellar y Refrigerar:
    • Cierra bien los frascos y deja que se enfríen a temperatura ambiente antes de refrigerar.
    • Puedes disfrutar de los chiles en vinagre desde el día siguiente, pero su sabor mejora si los dejas reposar al menos una semana.
