Conserva de Calabacín y Zanahoria 🥒🥕

Ingredientes (Rinde aproximadamente 4-5 frascos):

  • 3 kg de calabacín, cortado en juliana
  • 2 kg de zanahorias, peladas y cortadas en juliana
  • 2 dientes de ajo, picados
  • 5-6 pimientos rojos, cortados en juliana
  • 2 pimientos rojos picantes, cortados en juliana
  • ½ manojo de albahaca, picada
  • 2,5 cucharadas de sal de roca (50 gramos)
  • 2,5 cucharadas de azúcar (50 gramos)
  • 1 vaso (225 ml) de vinagre (4-5% de acidez)
  • 1 vaso (225 ml) de aceite vegetal calentado
  • 1 cucharada de semillas de cilantro (20 gramos)
  • 1 cucharada de pimienta roja en polvo (20 gramos)
  • Opcional: ramitas de tomillo, laurel adicional, o especias al gusto (clavos, canela en rama)

Preparación:

  1. Preparar las Verduras:
    • Corta el calabacín y las zanahorias en juliana.
    • Pica finamente los dientes de ajo.
    • Corta los pimientos rojos y los pimientos rojos picantes en juliana.
    • Pica la albahaca.
  2. Preparar la Mezcla de Conserva:
    • En un tazón grande, mezcla el calabacín, las zanahorias, el ajo, los pimientos rojos y picantes, y la albahaca picada.
    • Añade la sal de roca, el azúcar, el vinagre y el aceite vegetal calentado a la mezcla de verduras. Mezcla bien para asegurarte de que las verduras estén bien impregnadas con los ingredientes.
  3. Añadir Especias:
    • Añade las semillas de cilantro y la pimienta roja en polvo a la mezcla. Si decides usar especias adicionales como ramitas de tomillo, laurel o clavos, añádelas en este momento. Mezcla bien.
  4. Reposar la Mezcla:
    • Deja reposar la mezcla durante unos 30 minutos para que las verduras suelten sus jugos y se impregnen bien de los sabores.
  5. Esterilizar los Frascos:
    • Mientras la mezcla reposa, esteriliza los frascos de vidrio hirviéndolos en agua durante unos 10 minutos. Luego, sécalos bien.
  6. Llenar los Frascos:
    • Transfiere la mezcla de verduras a los frascos esterilizados, asegurándote de presionar ligeramente para eliminar las burbujas de aire. Llena los frascos hasta el borde con el líquido de la mezcla.
  7. Sellar y Almacenar:
    • Cierra bien los frascos con tapas esterilizadas y deja que se enfríen a temperatura ambiente.
    • Guarda los frascos en un lugar fresco y oscuro. Puedes comenzar a disfrutar de la conserva al día siguiente, pero su sabor será aún mejor si la dejas reposar al menos una semana.
