Ingredientes:
- 3 cucharadas de aceite
- 1/2 taza de cebolla roja picada
- 1 cucharadita de ajo finamente picado
- 1/2 taza de puerro finamente picado
- 2 litros de agua
- 600 gramos de pechuga de res
- 1/2 taza de zapallo rallado
- 1/4 taza de pallares frescos
- 1/4 taza de zanahoria picada
- 1/4 taza de frijoles frescos
- 1 calabacín en rodajas
- 1/4 taza de perejil
- 1 1/2 tazas de hojas de albahaca
- 20 gramos de queso parmesano
- Aceite de oliva al gusto
- Sal al gusto

Instrucciones:
- Preparar la Base de la Sopa:
- En una cacerola grande, sofríe la cebolla picada con 3 cucharadas de aceite de oliva durante 5 minutos.
- Añade el ajo picado y cocina por 3 minutos más.
- Agrega el puerro picado y cocina por otros 5 minutos.
- Añadir el Agua y Cocinar la Carne:
- Vierte 2 litros de agua en la cacerola, cubre y lleva a ebullición.
- Añade la pechuga de res y cocina a fuego medio durante 40 minutos.
- Preparar el Pesto:
- Mientras tanto, licúa las hojas de albahaca, el queso parmesano, 1/4 taza de agua hervida y el aceite de oliva al gusto hasta obtener una mezcla suave.
- Añadir las Verduras:
- Añade el zapallo, los pallares, la zanahoria, los frijoles y el calabacín en rodajas a la cacerola.
- Cocina durante 10 minutos.
- Añadir el Pesto y Cocinar:
- Vierte el pesto en la cacerola, mezcla bien y deja cocinar por 5 minutos más.
- Sazona con sal al gusto.
- Servir:
- Sirve caliente y disfruta de esta deliciosa sopa menestrón.
