Ralla el calabacín, las patatas y la zanahoria en un recipiente grande. Si el calabacín tiene mucho líquido, exprímelo con las manos o usa un colador para retirar el exceso de agua. - Añade los demás ingredientes:
Incorpora el queso rallado, la cebolleta picada y los huevos al recipiente. Mezcla todo bien hasta obtener una masa uniforme. Sazona con sal y pimienta al gusto. - Forma y cocina:
Calienta un sartén antiadherente con un poco de aceite. Con una cuchara, toma porciones de la mezcla y forma pequeñas tortitas directamente en el sartén. Cocina a fuego medio durante 3-4 minutos por cada lado, hasta que estén doradas y firmes. - Sirve y disfruta:
Retira del sartén y colócalas sobre papel absorbente si deseas eliminar el exceso de grasa. Sirve calientes con una ensalada fresca o una salsa de yogur como acompañamiento.
