Bacalao Fresco con Gambas y Pimientos del Piquillo 🍤🐟

Ingredientes

  • 4 filetes de bacalao fresco
  • 200 g de gambas peladas
  • 4 pimientos del piquillo (en tiras)
  • 1 cebolla (finamente picada)
  • 2 dientes de ajo (picados)
  • 200 ml de caldo de pescado
  • 100 ml de vino blanco
  • 3 cucharadas de aceite de oliva virgen extra
  • 1 cucharada de harina
  • Perejil fresco picado al gusto
  • Sal y pimienta al gusto

Instrucciones

  1. Preparar el Sofrito
    • Calienta el aceite de oliva en una sartén grande a fuego medio.
    • Añade la cebolla y el ajo, sofriendo hasta que estén dorados y fragantes (unos 3-5 minutos).
  2. Incorporar las Gambas y los Pimientos
    • Agrega las gambas y los pimientos del piquillo a la sartén. Cocina por 3 minutos, revolviendo ocasionalmente.
  3. Espesar la Salsa
    • Espolvorea la harina sobre los ingredientes y mezcla bien hasta que se absorba.
    • Vierte el vino blanco, deja que se reduzca durante 2 minutos para intensificar el sabor.
  4. Añadir el Caldo y Cocinar el Bacalao
    • Agrega el caldo de pescado a la sartén, removiendo constantemente hasta que la salsa espese ligeramente.
    • Sazona los filetes de bacalao con sal y pimienta, y colócalos en la sartén.
    • Tapa la sartén y cocina a fuego lento durante 10-12 minutos, hasta que el bacalao esté tierno y bien cocido.
  5. Decorar y Servir
    • Retira la sartén del fuego y espolvorea perejil fresco picado por encima para dar un toque de color y frescura.
    • Sirve caliente acompañado de arroz, patatas al vapor o una ensalada verde.
