Caldo de Pollo Añejo con Receta Típica Peruana 🐔🍲

Ingredientes:

  • 1 cucharada de sal
  • 2 dientes de ajo, aplastados
  • 2 litros de agua
  • 1 pollo añejo (preferiblemente criollo), cortado en piezas
  • 1 cebolla grande, cortada en trozos grandes
  • 2 ramas de apio
  • 2 zanahorias, peladas y cortadas en rodajas
  • 2 choclos (mazorcas de maíz), cortados en trozos
  • 3 papas amarillas o blancas, peladas y enteras
  • 1 trozo de jengibre fresco (opcional)
  • 1 cucharadita de pimienta negra en grano
  • 1 ramita de hierbabuena o culantro (cilantro fresco)
  • 1 ají amarillo entero (opcional, para sabor típico peruano)

Para Acompañar:

  • Cancha serrana tostada (maíz chulpi)
  • Rodajas de lima y limón

Direcciones:

  1. Preparar el Caldo:
    • En una olla grande, coloca las piezas de pollo añejo junto con el agua, la cebolla, el apio, el ajo y el trozo de jengibre.
    • Lleva a ebullición a fuego alto y luego reduce el fuego a medio.
  2. Espumar el Caldo:
    • Retira la espuma que se forma en la superficie con una cuchara para que el caldo quede claro y limpio.
  3. Añadir Verduras:
    • Agrega las zanahorias, los choclos y las papas al caldo.
    • Añade la sal, los granos de pimienta y, si deseas, el ají amarillo entero para dar un toque de sabor característico de la cocina peruana.
  4. Cocinar a Fuego Lento:
    • Cocina a fuego bajo durante 1.5 a 2 horas o hasta que el pollo añejo esté tierno y las papas estén cocidas.
  5. Agregar Hierbas Frescas:
    • Cuando el caldo esté casi listo, añade la ramita de hierbabuena o culantro y deja cocinar por 5 minutos más para perfumar el caldo.
  6. Servir:
    • Retira las piezas de pollo y las verduras del caldo y colócalas en platos hondos.
    • Vierte el caldo caliente encima.
  7. Acompañamientos:
    • Sirve el caldo acompañado de un poco de cancha serrana tostada en un tazón aparte y rodajas de lima y limón para que cada persona las exprima a su gusto.
