Ingredientes:
- 1 kg de carne de res (puede ser de la parte de la falda, aguja o osobuco, cortada en trozos grandes)
- 2 cebollas grandes, picadas
- 3 dientes de ajo, picados o triturados
- 2 zanahorias, peladas y cortadas en rodajas gruesas
- 3 papas grandes, peladas y cortadas en cubos grandes
- 1 pimiento rojo, picado
- 1 tomate grande, picado (o 1 lata de tomate triturado)
- 1 taza de caldo de carne (o agua con cubo de caldo)
- 1/2 taza de vino tinto (ideal para darle un toque festivo)
- 1 ramita de romero fresco (o 1 cucharadita de romero seco)
- 2 hojas de laurel
- 1 cucharadita de pimentĂłn dulce (opcional, para un toque ahumado)
- Sal y pimienta al gusto
- Aceite de oliva para sofreĂr
- 1/4 taza de guisantes (opcional)
- 1/4 taza de aceitunas verdes o negras (opcional, para un toque de sabor)
- 1 cucharada de azĂşcar (para balancear la acidez del tomate, opcional)

Instrucciones:
- Sellar la Carne:
- En una cazuela grande, calienta un par de cucharadas de aceite de oliva a fuego medio-alto.
- Agrega los trozos de carne y dĂłralos bien por todos los lados hasta que estĂ©n sellados. Esto le dará un color y sabor más intenso. Cuando estĂ©n dorados, retĂralos y resĂ©rvalos.
- SofreĂr los Vegetales:
- En la misma cazuela, agrega un poco más de aceite si es necesario y sofrĂe las cebollas, el ajo y el pimiento rojo hasta que la cebolla estĂ© transparente, unos 5-6 minutos.
- Añade las zanahorias y el tomate picado (o el tomate triturado). Cocina por unos 4 minutos, removiendo de vez en cuando.
- Agregar el Vino y las Especias:
- Vierte el vino tinto en la cazuela y deja que se reduzca durante unos 2-3 minutos, raspando el fondo de la cazuela para aprovechar los sabores pegados.
- Agrega el pimentĂłn, el romero, las hojas de laurel y la cucharada de azĂşcar (si decides usarla). Mezcla bien.
- Cocinar el Guiso:
- Vuelve a poner la carne en la cazuela junto con las papas cortadas en cubos.
- Añade el caldo de carne (o agua con cubo de caldo). Sazona con sal y pimienta al gusto.
- Lleva a ebulliciĂłn, luego reduce el fuego a medio-bajo. Cocina tapado durante unos 1.5 a 2 horas, o hasta que la carne estĂ© muy tierna y las papas cocidas. RevĂsalo de vez en cuando y, si es necesario, añade más caldo o agua.
- Añadir los Toques Finales:
- Cuando la carne esté tierna, agrega los guisantes y las aceitunas (si las usas).
- Cocina durante 10-15 minutos más, hasta que todo esté bien cocido y los sabores se hayan integrado.
- Ajusta la sal y pimienta, si es necesario.
- Servir:
- Este guiso de carne es perfecto para servir con arroz blanco, puré de papas, o una ensalada fresca para equilibrar los sabores.
