Rajas de Chile Poblano con Queso en Salsa de Jitomate 😋

Ingredientes:

  • 4 chiles poblanos
  • 5 jitomates
  • 1 cebolla
  • 400 gramos de queso fresco

Para el Caldillo:

  • 2 jitomates, asados
  • 1/2 cebolla, asada
  • 2 dientes de ajo, asados
  • 1 cucharada de harina (opcional, para espesar)
  • 1 cubo de caldo de pollo
  • (Licuar los ingredientes del caldillo)

Preparación:

  1. Asar y Preparar los Chiles:
    • Asa los chiles poblanos hasta que la piel esté quemada. Luego, colócalos en una bolsa de plástico para que suden durante unos minutos. Pela los chiles, quita las semillas y córtalos en tiras.
  2. Cortar Jitomates y Cebolla:
    • Corta los jitomates en rebanadas y la cebolla en trozos.
  3. Freír la Cebolla y Jitomates:
    • En una sartén, añade un poco de aceite y sofríe la cebolla hasta que esté transparente.
    • Agrega las tiras de jitomate y las rajas de chile poblano. Sazona ligeramente.
  4. Preparar el Caldillo:
    • En una licuadora, licúa los jitomates asados, la cebolla asada, los dientes de ajo asados, el cubo de caldo de pollo y la cucharada de harina (si usas).
  5. Añadir el Caldillo y Sazonar:
    • Vierte el caldillo en la sartén con las rajas, los jitomates y la cebolla. Sazona con sal al gusto.
    • Cocina a fuego bajo durante unos minutos hasta que la salsa tome un color rojo intenso (COLORADISIMO).
  6. Añadir el Queso:
    • Apaga el fuego y coloca el queso fresco en tiras o al gusto sobre el guiso caliente para que se derrita ligeramente.
  7. Servir:
    • Sirve caliente, acompañado de tortillas o arroz si lo prefieres.
