Ingredientes:
- 1 kilo de tejocotes
- 750 gramos de azúcar (puedes ajustar al gusto)
- 1 litro de agua
- 2 ramas de canela
- 4-5 clavos de olor
- Jugo de 1 limón
- (Opcional) Un poco de piloncillo para darle un sabor más profundo
- (Opcional) Cáscara de naranja o limón para aromatizar

Preparación:
- Lavar y Pelar los Tejocotes:
- Lava bien los tejocotes. Para pelarlos fácilmente, colócalos en una olla con agua hirviendo durante unos 5 minutos. Luego, retíralos del agua caliente y transfiérelos a un recipiente con agua fría. La piel se desprenderá fácilmente.
- Preparar el Jarabe:
- En una olla grande, añade el litro de agua, el azúcar, la canela y los clavos de olor. Si decides usar piloncillo, agrégalo en este paso.
- Cocina a fuego medio hasta que el azúcar se disuelva completamente y se forme un jarabe ligero.
- Añadir los Tejocotes:
- Añade los tejocotes pelados al jarabe y exprime el jugo de limón sobre ellos para evitar que se oxiden.
- Deja que todo hierva a fuego lento durante unos 45 minutos a 1 hora, o hasta que los tejocotes estén suaves y el jarabe esté espeso a tu gusto. Remueve ocasionalmente para evitar que se pegue.
- Aromatizar (Opcional):
- Si lo deseas, puedes añadir algunas cáscaras de naranja o limón durante la cocción para darle un toque aromático.
- Enfriar y Servir:
- Una vez que los tejocotes estén cocidos y el jarabe haya espesado, retira la olla del fuego y deja que se enfríe.
- Puedes servir los tejocotes en dulce, tibios o fríos, según tu preferencia.
