Sopa de Tortilla con Pollo 🍲🐔✨

Disfruta de esta deliciosa sopa de tortilla con pollo, perfecta para un día reconfortante.

Ingredientes:

  • 4 tomates rojos asados
  • 2 dientes de ajo asados
  • 1/4 cebolla asada
  • 1 chile ancho grande, hervido y desvenado
  • 5 tazas de caldo de pollo
  • Cilantro
  • Sal y pimienta al gusto

Para acompañar:

  • Aguacate en cubos
  • Pollo desmenuzado
  • Tortillas en tiras y fritas
  • Limón
  • Queso fresco
  • Crema

Instrucciones:

  1. Preparar el Caldo de Pollo:
    • Pon a hervir la pechuga de pollo, desmenúzala y reserva el caldo. Mientras tanto, fríe las tortillas en tiras hasta que estén crujientes.
  2. Licuar la Salsa:
    • En una licuadora, mezcla el caldo junto con los tomates asados, los ajos asados, la cebolla asada y el chile ancho. Licua hasta obtener una salsa homogénea y cuela si es necesario.
  3. Cocinar la Salsa:
    • En una olla con un poco de aceite de oliva, sofríe la salsa licuada. Añade sal, pimienta, comino, orégano y el cubo de caldo de camarón. Cocina durante 25 minutos.
  4. Añadir los Ingredientes:
    • Añade las papas peladas y cortadas junto con el apio. Cocina por otros 5 minutos.
  5. Incorporar el Pescado y los Camarones:
    • Deja hervir todo durante 15 minutos hasta que los mariscos estén cocidos.
  6. Servir:
    • Sirve caliente con cebolla morada, cilantro fresco y un toque de limón.
