Ensalada de Remolacha, Manzana y Zanahoria

Ingredientes:

  • 3 remolachas medianas
  • 2 manzanas verdes
  • 2 zanahorias grandes
  • 1/2 taza de nueces picadas (opcional)
  • 1/4 taza de pasas (opcional)
  • 1 cucharada de jugo de limón
  • 2 cucharadas de aceite de oliva virgen extra
  • Sal y pimienta al gusto
  • Hojas de menta fresca para decorar (opcional)

Preparación:

  1. Lava bien las remolachas, las manzanas y las zanahorias. Pela las remolachas y las zanahorias. No es necesario pelar las manzanas.
  2. Ralla las remolachas, las manzanas y las zanahorias en tiras finas. Puedes usar un rallador de mano o un procesador de alimentos.
  3. Coloca las remolachas, manzanas y zanahorias ralladas en un bol grande.
  4. Si estás usando nueces y pasas, agrégalas al bol.
  5. En un pequeño recipiente aparte, mezcla el jugo de limón y el aceite de oliva. Añade sal y pimienta al gusto.
  6. Vierte el aderezo sobre los ingredientes rallados en el bol y mezcla bien para que todo quede bien cubierto.
  7. Deja reposar la ensalada en el refrigerador durante al menos 30 minutos antes de servir para que los sabores se mezclen.
  8. Sirve la ensalada fría, decorada con hojas de menta fresca si lo deseas.
