Anti-Inflammatory Turmeric Chicken Soup 🥣✨

A hearty and flavorful soup loaded with anti-inflammatory ingredients like turmeric, fresh veggies, and tender chicken. Perfect for boosting immunity and soothing the body!

Ingredients:

  • 1/4 cup olive oil
  • 1 medium onion, diced
  • 1 large leek, white and light green parts only, halved lengthwise and thinly sliced
  • 3 large carrots, thinly sliced
  • 3 stalks celery, thinly sliced
  • 4 cloves garlic, minced
  • 2 tsp ground turmeric
  • 1 tsp ground ginger
  • 1/2 tsp ground cumin
  • 8 cups chicken broth (low sodium if preferred)
  • 2 cups cooked chicken, shredded or diced (use rotisserie chicken for convenience)
  • 1 cup pearl barley, farro, or rice (optional for extra heartiness)
  • 1 handful fresh spinach or kale
  • Salt and black pepper, to taste
  • Juice of 1 lemon, for serving
  • Fresh parsley or cilantro, for garnish

Instructions:

1️⃣ Sauté the Vegetables:
In a large pot, heat olive oil over medium heat. Add diced onion and sliced leek. Sauté for 3-4 minutes until softened. Stir in carrots and celery, cooking for another 5 minutes.

2️⃣ Add the Aromatics:
Add minced garlic, turmeric, ginger, and cumin to the pot. Stir constantly for 1 minute, allowing the spices to bloom and release their fragrance.

3️⃣ Build the Broth:
Pour in the chicken broth and bring to a simmer. If using grains like barley or rice, add them now. Cover and let simmer for 20-25 minutes, until the grains are tender.

4️⃣ Add the Chicken and Greens:
Stir in the cooked chicken and fresh spinach or kale. Simmer for another 5 minutes until the greens are wilted. Adjust seasoning with salt and pepper as needed.

5️⃣ Serve and Garnish:
Remove from heat and squeeze in the juice of 1 lemon for a bright, zesty finish. Ladle into bowls, and garnish with fresh parsley or cilantro.
