PASTEL DE ALGODÓN 🍰✨

Un pastel increíblemente esponjoso, ligero y suave que parece flotar en tu boca. Con una textura similar a la de un soufflé, este postre es perfecto para cualquier ocasión especial o simplemente para consentirte con algo dulce.


INGREDIENTES:

  • 🍬 1/2 taza de azúcar (dividida en dos partes)
  • 🥛 1/2 taza de leche
  • 🫒 1/4 taza de aceite vegetal
  • 🥚 4 huevos (separar claras y yemas)
  • 🍚 1/2 taza de harina de trigo
  • 🌾 1/4 taza de maicena (fécula de maíz)
  • 🌸 1 cucharadita de esencia de vainilla
  • 🍋 1 cucharadita de jugo de limón (para estabilizar las claras)
  • 🧂 1/2 cucharadita de sal

INSTRUCCIONES:

1. Preparar el molde:

Precalienta el horno a 150°C (300°F). Engrasa un molde desmontable y forra la base con papel pergamino para evitar que se pegue.

2. Hacer la masa base:

  1. En un bol grande, bate las yemas con la mitad del azúcar (1/4 de taza) hasta que estén cremosas y de color claro.
  2. Añade el aceite, la leche y la esencia de vainilla, mezclando bien.
  3. Tamiza la harina de trigo y la maicena sobre la mezcla y revuelve suavemente con una espátula hasta integrar. Reserva.

3. Montar las claras:

  1. En otro bol limpio y seco, bate las claras con la sal y el jugo de limón hasta que se formen picos suaves.
  2. Agrega el resto del azúcar (1/4 de taza) poco a poco mientras sigues batiendo, hasta obtener picos firmes y brillantes.

4. Integrar las claras y la masa:

  1. Incorpora las claras batidas en tres partes a la mezcla de yemas, utilizando movimientos envolventes para mantener la aireación. No mezcles demasiado para evitar perder volumen.

5. Hornear a baño maría:

  1. Vierte la mezcla en el molde preparado.
  2. Coloca el molde dentro de una bandeja con agua caliente (baño maría) y hornea a 150°C por 60-70 minutos, o hasta que el pastel esté firme al tacto y dorado ligeramente en la superficie.
  3. Apaga el horno y deja el pastel dentro por 10 minutos con la puerta entreabierta para evitar que se baje.

6. Enfriar y servir:

  1. Retira el pastel del horno y deja enfriar completamente antes de desmoldarlo con cuidado.
  2. Espolvorea azúcar glas por encima o decora con frutas frescas como fresas, arándanos o kiwi para un toque extra de sabor y color.
