Patatas con Espinacas y Huevos

Ingredientes:

  • 4 patatas medianas, peladas y cortadas en rodajas o cubos
  • 1 cebolla, picada
  • 250g de espinacas, lavadas y picadas groseramente
  • 4 huevos de gallina
  • 100g de queso crema
  • 150g de queso mozzarella, rallado
  • Aceite vegetal
  • Sal, al gusto
  • Pimienta negra molida, al gusto
  • Ajo seco molido, al gusto

Instrucciones:

  1. Preparar las patatas:
    • Pelar y cortar las patatas en rodajas o cubos.
    • Calentar aceite vegetal en una sartén grande a fuego medio.
    • Añadir las patatas y cocinar hasta que estén doradas y tiernas, aproximadamente 15-20 minutos. Revolver ocasionalmente para asegurar una cocción uniforme.
    • Sazonar con sal, pimienta y ajo seco al gusto.
  2. Cocinar las cebollas y las espinacas:
    • En la misma sartén, añadir la cebolla picada y cocinar hasta que esté translúcida y ligeramente caramelizada, aproximadamente 5-7 minutos.
    • Añadir las espinacas y cocinar hasta que se marchiten, aproximadamente 3-4 minutos. Revolver ocasionalmente.
  3. Combinar los ingredientes:
    • Reducir el fuego al mínimo y añadir el queso crema a la sartén, revolviendo hasta que se derrita y cubra uniformemente las verduras.
    • Romper los huevos directamente en la sartén y revolver suavemente para mezclar con el resto del plato. Cocinar hasta que los huevos estén completamente cuajados, aproximadamente 5 minutos.
    • Espolvorear el queso mozzarella rallado por encima y cocinar hasta que se derrita y esté burbujeante.
  4. Servir:
    • Probar y ajustar la sazón si es necesario.
    • Servir caliente y disfrutar de esta deliciosa comida.
