Instrucciones:
- Preparar los Ingredientes:
- Lava y pela los pepinos. Córtalos en rodajas finas y colócalos en un bol grande.
- Lava y cocina las remolachas hasta que estén tiernas. Déjalas enfriar, pélalas y córtalas en rodajas finas.
- Corta la cebolla roja en rodajas finas.
- Pica el perejil fresco y, si lo usas, el eneldo.
- Mezclar los Ingredientes:
- En el bol con los pepinos, añade las rodajas de remolacha y cebolla roja.
- Espolvorea el perejil y el eneldo por encima.
- Preparar el Aderezo:
- En un recipiente pequeño, mezcla el jugo de limón, el aceite de oliva, la sal y la pimienta. Bate bien hasta que estén completamente combinados.
- Aliñar la Ensalada:
- Vierte el aderezo sobre las verduras y mezcla suavemente para asegurarte de que todo esté bien cubierto.
- Ajusta la sazón con sal y pimienta al gusto.
- Servir:
- Transfiere la ensalada a un plato grande o a una fuente.
- Si lo deseas, añade un poco de queso feta desmenuzado por encima para un toque extra de sabor.
