Tremendo Risotto de Langosta con Mantequilla de Limón

Un plato elegante y lleno de sabor, ideal para sorprender en ocasiones especiales. Este risotto combina la cremosidad del arroz arborio con la delicadeza de la langosta y el toque refrescante del limón. 🍋🦞


Ingredientes:

  • 2 colas de langosta, cocidas y picadas
  • 1 1/2 tazas de arroz Arborio
  • 4 tazas de caldo de pollo o mariscos (caliente)
  • 1/2 taza de vino blanco seco
  • 1/2 cebolla, finamente picada
  • 3 dientes de ajo, picados
  • 2 cucharadas de mantequilla
  • 1 cucharada de aceite de oliva
  • 1/4 taza de queso parmesano rallado
  • Ralladura y jugo de 1 limón
  • 1/4 taza de crema espesa (opcional)
  • Sal y pimienta al gusto
  • Perejil fresco picado (para decorar)

Instrucciones:

  1. Cocina la langosta:
    Hierve o cocina al vapor las colas de langosta durante 6-8 minutos hasta que estén bien cocidas. Retira la carne del caparazón, córtala en trozos pequeños y resérvala.
  2. Saltea los aromáticos:
    En una sartén grande, calienta la mantequilla y el aceite de oliva a fuego medio. Añade la cebolla y el ajo picados, y cocina hasta que estén tiernos y fragantes (3-4 minutos).
  3. Inicia el risotto:
    Incorpora el arroz Arborio a la sartén, revolviéndolo para cubrirlo con la mezcla de mantequilla y aceite. Tuesta el arroz durante 1-2 minutos. Agrega el vino blanco y cocina, revolviendo, hasta que el líquido se absorba completamente.
  4. Agrega el caldo lentamente:
    Añade el caldo caliente de a poco, un cucharón a la vez, revolviendo constantemente. Espera a que el arroz absorba cada adición antes de agregar más. Este proceso asegura que el risotto tenga una textura cremosa. Continúa durante unos 18-20 minutos, hasta que el arroz esté suave pero aún al dente.
  5. Incorpora los sabores finales:
    Añade el queso parmesano, la ralladura de limón y el jugo de limón. Mezcla bien. Agrega la carne de langosta y la crema espesa (si la usas) y calienta por 2-3 minutos. Sazona con sal y pimienta al gusto.
  6. Sirve y decora:
    Coloca el risotto en platos y adorna con perejil fresco picado. Sirve inmediatamente y disfruta de esta delicia cremosa y cítrica.
