Canastitas de Yuca Rellenas de Atún 🥟🐟

¡Un aperitivo delicioso y nutritivo que combina la suavidad de la yuca con un relleno fresco de atún! Perfecto para reuniones familiares o como una merienda especial. 🌟


Ingredientes:

  • 🍠 1 libra de yuca, lavada y sin cáscara
  • 🧂 1 cucharadita de sal (para cocinar la yuca)
  • 🍅 1 tomate pequeño, picado en cubitos
  • 🧅 1/2 cebolla, picada en cubitos pequeños
  • 🌿 1 cucharada de cilantro fresco, picado
  • 🍋 Zumo de 1 limón
  • 🐟 2 latas de atún, en trozos
  • 🥄 2 cucharadas de mayonesa
  • 🥚 1 huevo
  • 🌽 3-4 cucharadas de maicena o fécula de maíz
  • 🧂 Sal al gusto (para el puré)
  • 🌶️ Pimienta negra molida, al gusto
  • 🛢️ Aceite vegetal, para freír

Instrucciones:

  1. Preparar la yuca:
    Corta la yuca en trozos y retira la raíz central. Hierve en una olla con agua suficiente para cubrirla, agregando una cucharadita de sal. Cocina por aproximadamente 15 minutos o hasta que esté tierna.
  2. Picar los vegetales:
    Corta el tomate y la cebolla en cubitos pequeños. Reserva en un bol junto con el cilantro fresco picado.
  3. Preparar el relleno:
    En el bol, mezcla la cebolla, el tomate, el cilantro, el zumo de limón, el atún desmenuzado y la mayonesa. Añade una pizca de sal y pimienta negra al gusto. Remueve bien hasta que todo esté integrado.
  4. Hacer el puré de yuca:
    Escurre la yuca cocida y tritúrala en un bol con un tenedor hasta obtener un puré suave. Incorpora una pizca de sal, el huevo y la maicena. Mezcla bien hasta formar una masa uniforme y manejable.
  5. Dar forma a las canastitas:
    Forra un exprimidor de naranjas con papel film y coloca un poco de la mezcla de yuca dentro. Presiona para formar pequeñas canastitas. Repite el proceso hasta usar toda la masa.
  6. Freír las canastitas:
    Calienta el aceite en una sartén a fuego medio. Fríe las canastitas en tandas de 3-4 piezas, girándolas hasta que estén doradas y crujientes. Retira y coloca sobre papel absorbente para eliminar el exceso de aceite.
  7. Rellenar y servir:
    Coloca una cucharada del relleno de atún en cada canastita. Decora al gusto con hojas de cilantro o rodajas de limón, ¡y sirve caliente!
