Lomo de Cordero Relleno: Una Perfecta Combinación de Sabores 🥩🍎

Este lomo de cordero relleno con carne y frutos secos es un plato que combina tradición y sofisticación. Perfecto para ocasiones especiales, su jugoso relleno y la deliciosa salsa de naranja con Pedro Ximénez conquistarán a tus invitados. ¡Un plato para lucirte! 💫🍽️

Ingredientes (para 6 personas):
1.5 kg de lomo de cordero abierto
200 g de carne molida de res
1 puñado de piñones
1 puñado de pasas deshidratadas o arándanos
1 puñado de nueces picadas
8 ciruelas pasas
2 cebollas grandes, en juliana
2 zanahorias, en cubos
300 ml de caldo de pollo
200 ml de vino Pedro Ximénez
Jugo de 2 naranjas
4 manzanas cortadas a la mitad
1 hoja de laurel
1 cucharadita de maicena disuelta en agua
Aceite de oliva virgen extra
Sal y pimienta negra

Preparación:

Preparar el Relleno:
Sofríe la cebolla en aceite durante 10 minutos, añade la zanahoria y cocina 10 minutos más.
Agrega la carne molida, salpimienta y cocina a fuego lento durante 8 minutos. Deja enfriar antes de usar.

Rellenar el Lomo:
Abre el lomo y distribuye la carne en el centro. Añade los frutos secos (piñones, nueces, pasas y ciruelas).
Enrolla el lomo con cuidado y átalo con hilo de cocina, asegurándote de que esté bien sellado.

Cocinar en el Horno:
Precalienta el horno a 200°C.
Coloca el lomo en una bandeja, engrasa con aceite y vierte el caldo, vino y jugo de naranja por encima.
Añade la hoja de laurel y hornea durante 1 hora y 15 minutos, regando con el jugo cada 20 minutos.
Introduce las manzanas en la bandeja en los últimos 30 minutos de cocción.

Preparar la Salsa:
Vierte el jugo de la bandeja en una cacerola, calienta a fuego medio y espesa con la maicena disuelta en agua, removiendo hasta obtener la consistencia deseada.

Servir y Disfrutar:
Corta el lomo en rebanadas y sirve con las manzanas asadas y la salsa caliente.
