Pasta Cremosa de Camarones 🍤🍝

Ingredientes:

Para los Camarones:

  • 1 libra de camarones grandes, pelados y desvenados
  • 1 cucharada de aceite de oliva
  • 2 dientes de ajo, picados
  • ½ cucharadita de pimentón
  • ½ cucharadita de sal
  • ¼ cucharadita de pimienta negra
  • Jugo de ½ limón

Para la Pasta y la Salsa:

  • 8 onzas de pasta fettuccine o linguini
  • 2 cucharadas de mantequilla sin sal
  • 1 cucharada de aceite de oliva
  • 3 dientes de ajo, picados
  • 1 taza de tomates cherry, cortados a la mitad
  • 1 ½ tazas de crema espesa
  • ½ taza de queso parmesano, rallado
  • 1 taza de espinacas frescas o hojas de albahaca
  • Sal y pimienta, al gusto

Instrucciones:

  1. Cocinar la Pasta:
    • Lleva a ebullición una olla grande con agua salada y cocina la pasta según las instrucciones del paquete hasta que esté al dente.
    • Reserva ½ taza del agua de la pasta, luego escurre la pasta y déjala a un lado.
  2. Preparar los Camarones:
    • Sazona los camarones con pimentón, sal, pimienta negra y jugo de limón.
    • Calienta 1 cucharada de aceite de oliva en una sartén grande a fuego medio-alto.
    • Añade los camarones y el ajo. Saltea durante 2-3 minutos por cada lado, o hasta que los camarones estén rosados y cocidos. Retira los camarones y déjalos a un lado.
  3. Preparar la Salsa Cremosa:
    • En la misma sartén, derrite la mantequilla con el aceite de oliva a fuego medio.
    • Añade el ajo y los tomates cherry. Saltea durante 2-3 minutos hasta que los tomates se ablanden ligeramente.
    • Vierte la crema espesa y revuelve para combinar. Deja que la salsa hierva a fuego lento durante 3-4 minutos hasta que espese ligeramente.
    • Incorpora el queso parmesano rallado y sazona con sal y pimienta.
  4. Combinar la Pasta y los Camarones:
    • Añade la pasta cocida a la sartén, mezclándola con la salsa cremosa. Si la salsa está muy espesa, añade el agua de la pasta reservada poco a poco hasta alcanzar la consistencia deseada.
    • Añade las espinacas (o albahaca) y los camarones cocidos. Deja que la espinaca se marchite durante 1-2 minutos.
  5. Servir:
    • Divide la pasta en platos o cuencos. Decora con más queso parmesano y albahaca fresca para adornar.
    • Sirve caliente con pan de ajo y un chorrito de limón para un toque de frescura adicional.
