🌟 Pastel de Piña Húmedo: ¡Un Tesoro en la Tierra! 🌟

Esta receta es especial. Es jugosa, dulce, llena de sabor tropical y perfecta para cualquier ocasión. Guarda bien esta receta porque, como dicen, ¡es un tesoro que todos deberían tener!

Para el pastel:

  • 🍍 1 lata de piña en rodajas (sin escurrir) – Usa tanto las rodajas como el jugo.
  • 🍚 1 taza de harina de trigo.
  • 🍬 1 ½ tazas de azúcar.
  • 🥚 2 huevos grandes.
  • 🧂 2 cucharaditas de bicarbonato de sodio.

Para el glaseado:

  • 🧀 8 oz (225 g) de queso crema (ablandado).
  • 🧈 1 barra de mantequilla (1/2 taza, ablandada).
  • 🍯 2 tazas de azúcar glas.
  • 🌸 2 cucharaditas de extracto de vainilla.
  • 🥛 2 cucharadas de leche.

Instrucciones:

1. Preparar el horno y el molde:

  1. Precalienta el horno a 180°C (350°F) .
  2. Engrasa y enharina un molde para pastel (redondo o rectangular). También puedes forrar el fondo con papel pergamino.

2. Mezclar los ingredientes del pastel:

  1. En un tazón grande, mezcla la harina , el azúcar , los huevos , la piña con su jugo y el bicarbonato de sodio .
  2. Bate hasta obtener una mezcla homogénea. No te preocupes si queda un poco líquida; esto es normal.

3. Hornear el pastel:

  1. Vierte la mezcla en el molde preparado.
  2. Hornea durante 30-35 minutos , o hasta que al insertar un palillo en el centro, este salga limpio.
  3. Retira del horno y deja enfriar completamente antes de desmoldar.

4. Preparar el glaseado:

  1. En un tazón mediano, bate el queso crema y la mantequilla ablandados hasta que estén suaves.
  2. Añade gradualmente el azúcar glas , tamizándolo para evitar grumos.
  3. Incorpora el extracto de vainilla y la leche , y sigue batiendo hasta obtener una consistencia suave y cremosa.

5. Decorar el pastel:

  1. Una vez que el pastel esté frío, cúbrelo con el glaseado usando una espátula.
  2. Decora con rodajas de piña fresca o enlatada si lo deseas.

  • Piña fresca: Si prefieres usar piña fresca, corta una piña en trozos pequeños y licúa parte de ella para obtener jugo. Usa aproximadamente 1 taza de jugo y 1 taza de trozos de piña.
  • Nueces o coco rallado: Añade 1/2 taza de nueces picadas o coco rallado a la masa para darle un toque crujiente.
  • Sin glaseado: Si prefieres algo más ligero, omite el glaseado y espolvorea azúcar glas por encima.
  • Versión vegana: Sustituye los huevos por linaza + agua, usa margarina vegetal en lugar de mantequilla y asegúrate de usar queso crema vegano para el glaseado.
